Sauteed Plantains and Sweet Potatoes Ingredients

2 tb Butter or margarine 1 Garlic clove, minced
2 tb Cooking oil 1/2 c Chicken or beef broth
2 c Sliced cooked sweet potatoes 2 tb Butter or margarine
2 Plantains, peeled & chopped 2 tb Chopped fresh thyme, dill,
1/2 c Chopped green onion Salt to taste
1/2 c Chopped cooked ham (opt) Pepper to taste

Instructions for Sauteed Plantains and Sweet Potatoes

In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic. Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season, to taste, with salt and pepper.
