Scottish Oatcakes #2 Ingredients

1 c Rolled oats 1 pn Salt
1/2 c All-purpose flour 3 tb Butter
2 tb White sugar 1/3 c (approx) ice water
1/2 ts Baking powder

Heres one: In bowl, stir together rolled oats, flour, sugar, baking powder and salt. Using pastry blender or 2 knives, cut in butter until crumbly. Using fork, quickly stir in water, adding a little more if necessary to form ball. Pat into 8-inch circle on greased baking sheet; bake in 425F oven for 12 to 15 minutes or until light brown.
