Caribban Style Banana Bread Ingredients

1/2 c Butter 1/2 ts Salt
1/2 c Brown sugar 3/4 ts Nutmeg
1 Egg, well beaten room temp. 1 1/4 c Mashed very ripe bananas
1/4 c Jamaican rum 1/2 c Chopped walnuts
1 ts Vanilla 1/2 c White seedless raisins
2 c Flour 1/2 c Shredded coconut
1 ts Baking powder

Instructions for Caribban Style Banana Bread

Cream butter and sugar. Beat in egg until light and fluffy. Stir in rum and vanilla. Sift all dry ingredients together. Add to butter-sugar mixture, alternately with bananas, mixing well after each addition. Fold in remaining ingredients. Pour into well buttered and floured loaf pan. Bake in 350 oven for 1 hour and 15 minutes, until bread shrinks from sides of pan. Cool 30 minutes then unmold. Wrap tightly in foil. Serve at room temp. with plenty of sweet butter.
