Skorthalia (Walnut and Garlic Paste)oct1997 Ingredients

1 c Walnuts Juice of 1 lemon
3 sl White bread Salt and white pepper; to
4 Cloves garlic or more to 1 pn Cayenne
1/4 c Canola oil 1 tb Red wine vinegar
1/3 c Olive oil

Instructions for Skorthalia (Walnut and Garlic Paste)oct1997

1. Soak bread in water 2. Squeeze out water from bread and place in bowl of food processor 3. Add garlic, salt, pepper,and cayenne and run the machine to form a paste. 4. Start adding lemon and vinegar alternating with oils to the consistency of mayonnaise. 5. Add finely chopped walnuts turn machine just to combine. ( you want to feel the walnuts) Serve over fried fish. NOTES : This recipe may be done with 1 large mashed potato instead of the bread.
