Cheese Muffins with Apple Variation Ingredients

CHEESE MUFFINS2 lg Beaten eggs
2 c All purpose flour APPLE MUFFINS VARIATION
1/4 c Sugar 2 c Apple cubes
1 tb Baking powder Cinnamon and nutmeg
1/2 ts Salt TOPPING FOR APPLE MUFFINS
1/2 ts Baking soda 1/4 c Butter
2 c Grated old Cheddar cheese 1/2 c Flour
3/4 c Plain yogurt 1/2 c Golden sugar
1/4 c Melted butter or vegetable

Instructions for Cheese Muffins with Apple Variation

Date: Mon, 29 Apr 1996 00:28:55 -0700 From: Joyce Verkerk In large bowl, combine flour, sugar, baking powder, salt and baking soda. Stir in cheese. In small bowl, combine yogurt, butter and eggs; add to dry ingredients and stir just until moistened. Fill greased muffin pans with batter. Makes 12 muffins. Bake 400 degrees for 20 minutes or until done. This muffin recipe works well as a base for variations. One favourite variation is Apple. For the Apple Muffins: prepare as above, with apple instead of cheese. Mix topping ingredients together and distribute over the batter. Tends to make more muffins than the cheese version.
