Cheesecake Cookies Ingredients
1/3 c
Butter
1 pk (8 Oz)
Cream Cheese
1/3 c
Brown Sugar
; firmly packed
1
Egg
1 c
Flour
2 tb
Milk
1/2 c
Walnut
s; finely chopped
2 tb
Lemon
Juice
Filling
1/2 ts
Vanilla
1/4 c
Sugar
Instructions for Cheesecake Cookies
Cream butter with brown sugar in smal bowl. Add flour and nuts. Mix until crumbly. Reserve 1 cup of this mixture for topping. Press remainder into bottom of 8" square pan. Bake at 350? for 12 to 15 minutes. FOR THE FILLING Blend sugar and cream cheese until smooth. Add egg, milk, lemon juice, and vanilla and beat well. Spread over baked crust and sprinkle with reserved crumbs. Bake a 350? for 25 minutes. Cool and cut into 2" squares. Makes 16 squares. This is the same recipe my family has used for years. We substitute Pecans for walnuts and only keep 1/4 cup of crust to sprinkle on top.To make two 9x13 in trays, triple crust and quadruple filling. Reserve one cup for topping. Line bottom of baking dish with parchment paper before baking for easier removal.
