Smoked Salmon with Lemon Mayonnaise Ingredients

1 tb Lemon zest; minced 4 sl Red onion
1 ts Capers; drained and chopped 4 Boston lettuce leaves
4 English muffins; split and

Instructions for Smoked Salmon with Lemon Mayonnaise

Prep: 5 min, Cook: 5 min. serves 4 Combine mayonnaise, lemon zest and capers in a small bowl and mix thoroughly. Spread mayonnaise mixture over toasted English muffin. Top with salmon, onion and lettuce and cover with other muffin half. Cut sandwich in half before serving. Per serving: calories 279, fat 13.4g, 44% calories from fat, cholesterol 15mg, protein 10.1g, carbohydrates 28.2g, fiber 1.9g, sodium 679mg.
