Smoking Turkey Ingredients

RUB MOP
1/4 c Paprika - or so 1/2 c Worcestershire sauce
1 ts Garlic Powder - or so ... 1/2 c Soy sauce
1 ts Black Pepper - or so 1/2 c Pop - whatta ya got? I use
1/4 ts Salt - or so 1 Dollop sweet hot mustard -
1 ts Parsley Little salt
1 ts Sage Little pepper
1 ds Lemon Pepper Little poultry seasoning
1 ts Ground dry mustard

Instructions for Smoking Turkey

From: karl.a.mitschke@bangate1.tek.com Date: Wed, 21 Aug 96 3:29:12 UTC I have only smoked one turkey on my brinkmans water smoker, but this is what I did: Taste the rub ... non of the ingredients should overpower another.. if one does, adjust.... Rub the turkey inside and out, and refrigerate over night. Cook the turkey breast side down.... Mop when you adjust your fire. I used plain water in my water pan, and cooked for around 24 hours as I recall.... When the turkey was nearly done, I brought it in the house to finish in the oven. (Needed the gravy!) This is the same way I do chicken, and havent received one complaint yet..... Note that all my ingredients are approximate amounts, and I dont always use all of them... Its all to taste, and all depends on what I got... Always starts with paprika and garlic though.... bbq-digest V2 #087 From the BBQ recipe list.
