Fruited Brown Rice Muffins Ingredients

2 1/4 c Whole wheat pastry flour 1 c Rice or soy milk; (could
3 ts Baking powder 2 Egg whites beaten
1 ts Salt 3/4 c Cooked brown rice
1/4 c Wheat germ; (I used 1/4 c 1/4 c Unsweetend applesauce
3/4 c Raisins

Instructions for Fruited Brown Rice Muffins

Sift together flour, baking powder, and salt, and stir in wheat germ (or oat bran). Add raisins, milk, egg whites, rice, and applesauce and blend briskly. Fill greased muffin tins 2/3 full and bake at 425 for 30 minutes. Makes 15 Nice, Moist Muffins. Posted to fatfree digest by "Ross, Lynne" on Nov 19, 1998, converted by MM_Buster v2.0l.
