Cheesy Scalloped Potatoes Ingredients
2 tb Butter or
margarine
3/4 c
Velveeta
cheese; shredded or
2 tb
All-purpose flour
3 md
Potato
es; peeled and sliced
Salt &
pepper
; to taste
1/2 c
Cheddar
cheese; shredded
1 1/4 c
Milk
Instructions for Cheesy Scalloped Potatoes
For sauce, melt butter, stir in flour, salt and pepper. Add milk all at once. Cook and stir till thickened and bubbly. Stir in Velveeta cheese until melted. Remove from heat. Place half the sliced potatoes in a greased 1 quart casserole. Cover with half the sauce.
Repeat layers. Sprinkle with cheddar cheese. Bake, covered, in a 350F degree oven for 35 minutes. Uncover; bake 30 minutes more or till potatoes are tender. Let stand 5 minutes. Recipe by: BH&G Posted to MC-Recipe Digest V1 #1063 by "creedenites" <creedenites&at;sprintmail.com> on Jan 30, 1998

Excellent, easy and delicious recipe! It was a big hit at our house last night. I served with pork chops and asparagus and will be making this often. I had to add about 15 minutes to the baking time, but I think it was because I started with cold potatoes.

The cheesy sauce was a big hit with all, most especially the four children. I doubled the recipe and needed almost double the cooking time.
