Chicken and Shrimp Gumbo (Creole) Ingredients

5 lb Stewing hen, cut up 3 1/2 ts Salt
1/2 c Shortening 1/2 c Flour
1 c Chopped onion 2 tb Worcestershire sauce
1/2 c Chopped fresh parsley 1 tb Lemon juice
1/2 ts Pepper 1/2 ts Thyme
2 lb Uncooked shrimp 1/2 c Chopped celery
1/2 c Chopped green onion 1 ts File powder

Instructions for Chicken and Shrimp Gumbo (Creole)

Sprinkle chicken with 1.5 tsp of salt. Melt shortening in a large heavy pot. Add chicken pieces; brown, turning on all sides, for about 15 minutes Remove chicken. Stir flour into hot fat in wich chicken was browned. Stir constantly, keeping heat low, until flour is dark brown.
