Southern Crab Royal Ingredients

1 1/2 tb Onion -- minced 2 tb Flour
1 ds Nutmeg 1 lb Crabmeat
2 tb Green pepper -- finely 1 ts Salt
Chopped 8 Patty shells -- baked
1/4 ts Dry mustard 2 c Half & Half
3 tb Margarine Mushrooms & parsley/
2 Egg yolks -- beaten Garnish

Instructions for Southern Crab Royal

Saute onion and green pepper in margarine until tender. Add flour and salt and cook 2 minutes. Gradually stir in Half & Half and stir until smooth. Add nutmeg and mustard. Gradually add egg yolks, stirring constantly. Add drained, flaked crabmeat. Cook 5 minutes. Serve in individual baked patty shells and garnish with fresh mushrooms and parsley.
