Chicken Cordon Blue Ingredients
4 lg Boned
chicken breast
1
Egg
; beaten
8 sl Prosciutto; or cooked
ham
Bread crumbs
8 sl
Swiss cheese
; Gruyer, Jack
3 tb
Butter
; for frying
Thyme
; optional
Instructions for Chicken Cordon Blue
Prepare chicken breasts by cutting lengthwise, making a total of eight pieces. Place between plastic wrap and pound with a mallet until each portion is no more than 1/8 inch thick. Place one slice of prosciutto and a slice of cheese on the chicken. Sprinkle a little thyme if you like. Roll chicken to enclse filling. Coat with flour and dip in one beated egg. Then roll in dry bread crumbs. In a large fry pan melt 3 tablesppons butter and add chicken rolls. cook 15 minutes. Turn frequently to brown all sides. Transfer to warm serving dish. 6-8 servings. this was an easy recipe to make and was a hit for my famiy. I added a light wine chicken sauce and a spinach salad w/dressing and hot dinner rolls............I will definetly make this recipe again and again. Thanks

This was excellent. It as crispy on the outside and just plain delicious. I didn't cut the chicken into 8 strips. I just pounded 4 halves to 1/8 inch and followed the recipe

This was fabulous. Crispy on the outside and just plain delicious. I didn't cut the chicken into strips........I did it as 4 servings following the recipe and it came out great.
