Chicken Stuffed Papayas Ingredients

2 tb Butter	3 Tomatoes, peeled & chopped
1 Chopped onion	2 lg Firm papayas
1 Minced garlic clove	1 Green apple, sliced
2 Chopped slices of bacon	1/4 c Ricotta cheese
2 c Diced cooked chicken	Paprika
1 tb Lemon juice	Hot sauce
1/2 c White wine

Instructions for Chicken Stuffed Papayas

Melt butter in saucepan & add onion, garlic & bacon. Saute for 5 minutes until onion is soft. Stir in chicken, lemon juice, wine & tomatoes. Simmer for 5 minutes. Peel the papayas & cut them in half lengthwise & scoop out seeds. Arrange papaya halves on a baking dish, cut side up. Heap chicken mixture into each half. Decorate each with apple slices & 1 Tbls. of ricotta. Sprinkle with pinch of paprika & bake in a 350 oven for 40-45 minutes. Serve with hot sauce.
