Stick skewers into clean red apples. Combine in heavy saucepan, sugar, syrup and cinnamon oil and cook over low heat. Stir until dissolved. Turn to medium heat and do not stir. Cook to 248 degrees on a candy thermometer. Stir in coloring. Place pan over boiling water while twirling one apple at at time in mixture. Twirl once and then set it up and twirl apple again. The temperature is not hot enough it makes the candy gummy and it sticks your teeth together. Try 285 F for soft crack.

Lightly spray a glass dish with cooking spray and it's easy to get the apples off when they've cooled. Simply give them a twist to break them loose and they'll come right off the glass dish. Definitely use cinnamon oil; I tried using "red hots" candies and they made the coating very waxy. You can buy cinnamon oil (make sure it is specifically for baking, not just cosmetic scent) online if you can't find it in your local stores. Simple cinnamon flavoring may not stand up to the high temperatures required for candy making like the oil does. For quick sticks, use kitchen shears or other sharp scissors and cut the end of a popsicle stick to a point.
