Company Casserole #1 Ingredients

1 lb Ground chuck 1 pk (8-oz) cream cheese
1 tb Butter 1/4 c Thick sour cream
2 cn (8-oz) tomato sauce 1/3 c Onion; chopped
8 -(up to) 2 tb Bell pepper; chopped
12 oz Noodles 2 tb Melted butter
1 c Cottage cheese

Instructions for Company Casserole #1

Brown meat in 1 tablespoon butter. Stir in tomato sauce and remove from heat. Boil noodles in salted water; drain. Combine cottage cheese, cream cheese, onion, green pepper and sour cream; mix well. In a buttered casserole, spread half the noodles. Cover with cheese mixture; then make another layer of noodles. Pour 2 tablespoons melted butter over the top layer of noodles. Put hamburger sauce on top. Bake 20 to 30 minutes in a 350 degree oven. A real good buffet casserole that feeds 10 to 15 people. From . P.S. Because different brands of ingredients can affect the finished casserole, I usually mix the noodles with the dairy sauce first to make sure the mixture is not too stiff because the finished casserole might then be on the dry side. If necessary, I'll add a little milk or more dairy sauce to loosen up the noodles. I also adjust the casserole ingredients (onion, green pepper, salt) to taste and if the tomato sauce in the beef topping is too sharp, I'll add a little sugar. This casserole is excellent for making ahead of time and refrigerating or freezing until ready to bake and serve..

I have been making this recipe for over forty years, having gotten it from my aunt who had gotten it from her neighbor. I have varied the ground beef with ground turkey and frequently with soy protein burger and have used low fat and no fat versions of the dairy products. They all work but, of course, fat versions of anything usually taste a little bit better. I top it with shredded Parmesan cheese before it goes into the oven and I like to serve it with glazed carrots, steamed broccoli florets, and a well dressed romaine salad. Everybody loves it and are always asking for it and the recipe- my friends, my children, their friends, my relatives. It's a holiday and special occasion must-have in our house, a guaranteed winner.
