Corkys Memphis-Style Coleslaw Ingredients
1 md Head green
cabbage
- cored
3/4 c Granulated
sugar
and shredded
1/4 c Dijon-style
mustard
2 md
Carrot
s; peeled and grated
1/4 c
Cider vinegar
1 Green
bell pepper
; cored,
2 tb
Celery
seeds
seeded and finely diced
1 ts
Salt
2 tb
Onion
, grated
1/8 ts
White pepper
2 c Prepared
mayonnaise
Instructions for Corkys Memphis-Style Coleslaw
1) Wash cabbage and discard tough leaves. Core and shred. : Place cabbage, carrots, green pepper and onion into a large bowl. 2) In another bowl, mix together remaining ingredients. Pour over : veggies in large bowl. Toss well. 3) Cover and chill for 3 - 4 hours before servings. Per serving: 711 calories, 62 g fat, 37 mg cholesterol. Corkys Bar-B-Q, Memphis, Tenn. I made this recipe using a 16 oz. bag of 3-color deli cole slaw, adding green bell pepper and diced onion. I also used less sugar and mayo. Very tasty served with BBQ ribs.
