Pork Fried Rice Ingredients
1 1/2 tablespoons
Vegetable oil
divided
1/2 cup Green
Onion
s thinly sliced/including tops
2
Eggs
beaten
3 cups Cooked
brown rice
; cooled
1 cup
Ham
diced / fully cooked
1 tablespoon
Soy sauce
1 cup
Mushroom
s finely chopped
Instructions for Pork Fried Rice
In large skillet or wok, heat 1/2 tablespoon oil over medium heat. Add eggs and cook without stirring until set. Invert skillet over baking sheet to remove cooked eggs; cut into 1-1/2 x 1/2-inch strips. In same skillet, heat remaining oil over medium-high heat. Stir-fry ham, mushrooms, and green onions in oil for three minutes, or until mushrooms and onions are tender. Stir in cooked rice and egg strips; sprinkle with soy sauce. Toss lightly; heat thoroughly.

A good dinner, I had to use canned mushrooms but still good. We did use more soy sauce on the plate. Next time I may add a couple cloves of garlic.

I loved this recipe! I didn't have any brown rice on hand so I used plain white rice instead and added a bit more soy sauce for flavor.
