Creamy Sweet Potato Salad Ingredients

2 c Mayonnaise	1 c Peas
1/3 c Buttermilk	1/2 c Sweet red pepper; OR green
2 tb Lemon juice	1/2 c Green onions; sliced
1 tb Dijon mustard	1 bn Fresh spinach
1 ts Sugar	3 Bacon strips; cooked and
3 lb Sweet potatoes; cooked;

Instructions for Creamy Sweet Potato Salad

1. In a bowl, blend mayonnaise, buttermilk, lemon juice, mustard and sugar until smooth. 2. In a large bowl, combine sweet potatoes, peas, pepper and onions. 3. Pour dressing over all and toss to blend. 4. Chill at least two hours or overnight. TO SERVE: Spoon salad into a large brown lined with spice and and top with bacon.
