Pork Scallopine in Lime Sauce Ingredients

2 tb Butter 2 tb Fresh lime juice
4 Pork loin cutlets 1/2 c Chicken broth
Pounded to 1/4" thickness 1/2 c Skimmed evaporated milk
Salt & pepper Lime zest, from one lime
2 tb White wine

Instructions for Pork Scallopine in Lime Sauce

Heat butter in large heavy skillet over med high heat. Season pork with salt & pepper & saute quickly, about 2-3 minutes per side. Remove pork from pan & keep warm. Add wine & lime juice to pan; deglaze pan. Bring to a boil; add chicken broth & milk, lower heat & cook over med heat, stirring constantly, about 2 minutes. When sauce has reduced & thickened, season to taste with salt & pepper. Spoon some sauce over each chop & sprinkle with lime zest to serve. Ingredient Insight - look inside this recipe

The sauce is chunky and clotted. It's not very palatable, texture-wise. Flavor is good otherwise. The Evaporated Milk is the problem, I think.
