Cucumber Chicken Pita Sandwiches Ingredients

1/2 c Plain yogurt	4 Lettuce leaves
1/4 c Cucumber; finely chopped	6 oz Thinly sliced fully cooked
1/2 ts Dried dill weed	1 Tomato; thinly sliced
1/4 ts Dried mint	1/3 c Feta cheese; crumbled
4 lg Pita bread

Instructions for Cucumber Chicken Pita Sandwiches

A very refreshing, Greek-inspired pita wrap, great to serve on a hot day. From a wonderful little checkout stand cookbook called, Dinner on the Double, by Better Homes and Garden. First make dressing: Stir together yogurt, cucumber, dill weed and mint in a small bowl. For each sandwich: place a pita round on a plate. Top with lettuce, chicken and tomato. Spoon dressing on top. Sprinkle with feta cheese. Roll up each pita and secure with toothpicks or wrap in foil. Serve immediately. Posted to recipelu-digest by Sandy on Mar 18, 1998
