Cucumber Salad with Sun Dried Tomatoes Ingredients

8 c Sliced cucumbers	1/2 c Plain yogurt
1/2 ts Salt	2 Whole oil packed sun dried
1 ts Dried basil	Pepper to taste

Instructions for Cucumber Salad with Sun Dried Tomatoes

Combine cucumbers with salt and toos to mix. Place in collander and weight with a heavy object for about 30 minutes, so cukes drain well. Toss all ingredients, season with pepper to taste and serve immediately. NOTES : Salting the cucmbers will keep them extra crisp. It also prevents the salad from gettin watery.
