Curried Beef and Fruit Salad Ingredients

12 oz Deli roast beef; sliced 1/4 1 c Nonfat plain yogurt
1 lg Apple; cut into 1/2 inch 1 1/2 tb Chopped chutney
2 sm Peaches; into into 1/2 1 ts Curry powder
3/4 c Chopped celery Boston or leaf lettuce
1 Green onion; sliced 2 tb Slivered almonds

Instructions for Curried Beef and Fruit Salad

From: Cheryl Miller Date: Wed, 26 Jun 1996 21:44:50 +0000 Stack beef slices; cut lengthwise in half, then crosswise into 1 1/2 inch wide strips. In large bowl, combine beef, apple, nectarines, celery, and green onions. In small bowl combine yogurt, chutney and curry powder until well blended. Add to beef mixture and toss to coat. Cover and refrigerate at least one hour. To serve, arrange lettuce on serving platter; top with beef mixture. Sprinkle with almonds. Serves 4. EAT-L Digest 26 June 1996 From the EAT-L recipe list.
