Source: Southern Living Magazine 1/97 COMBINE first 5 ingredients in a large bowl, stirring to coat apple slices; pour into a lightly greased 8-inch square baking dish. BEAT eggs and sugar at medium speed with an electric mixer until blended. Add butter and vanilla, beating until smooth. COMBINE flour, baking powder, and salt; fold into egg mixture. Spread over apple slices. BAKE at 350 degrees F. for 30 minutes or until lightly browned. Serve with whipped cream or vanilla ice cream. Everyone raved about this Apple Cobbler! It has a texture like none other! I substituted 3/4 cup of light brown sugar and 1/4 cup dark brown sugar and used more apples for a fuller dish. This recipe is so easy and will definitely be a family favorite! I'm not sure about the prep time...was multitasking but it was quick.
