Ingredients


Preparation

Make a white sauce of butter, flour, chicken broth, and wine. Beat cream and egg yolks together and add to sauce. Season with salt and pepper. Top a slice of toast with slices of ham and chicken. Pour sauce over all and sprinkle with Parmesan cheese. Broil until cheese melts. Makes 4 open-faced sandwiches. I made this as the Pittsburgh food for our Superbowl party. I cut the toast into quarters, layered one slice each of ham and turkey (leaving a few without ham, since i don't eat pork) and a spoonful of the cream sauce on each, then topped with parmesan and broiled. they were good, altho' my husband said he wasn't too fond of them. The sauce wasn't very flavorful, so I kept adding pepper and salt, and a dash of paprika. Next time I might add a bit more butter, or something to spice it up a little more. Otherwise I thought they were great. They do get a bit soggy if sitting around so best to eat right away.
