Egg Salad Monte Cristo Sandwiches Ingredients
8 Hard-cooked
eggs
12 sl Good quality whole
wheat
1/4 c Chopped green
pepper
Cooking Oil
1/4 c Chopped
celery
BATTER
2 tb Chopped green
onion
1/2 c
Cornmeal
1/2 c
Mayonnaise
1/2 c
Flour
2 ts Prepared
mustard
1 ts
Baking powder
1 ts
Sugar
1 ts
Salt
1/2 ts
Salt
2 c
Milk
1/4 ts
Pepper
2
Eggs
Instructions for Egg Salad Monte Cristo Sandwiches
Combine all above ingredients, with the exception of the bread and oil. Spread egg salad on six slices of bread and cover with remaining six slices to make six sandwiches. In a separate bowl mix batter ingredients. Heat approximately 1/2 inch of oil in a deep, heavy skillet. Carefully dip the sandwiches in the batter and fry on both sides until golden.
