Enoki Spinach Salad Ingredients

1 lb Fresh spinach	5 oz Olive oil
4 oz Toasted almonds	2 oz Balsamic vinegar
1 cn (15-oz) Mandarin oranges	1 tb Dijon mustard
1 pk Enoki mushrooms	2 tb Chopped chives
DRESSING	2 tb Sugar

Add toasted almonds and mandarin oranges and toss well. Ligthly wash mushrooms and cut off ends where stems start to separate. Spread mushrooms over top of salad.
