Place potatoes in large mixing bowl. Add vanilla and powdered sugar, 1 cup at a time. Mix until it resembles pie crust. On a piece of waxed paper dusted with extra powdered sugar, roll into oblong shape to about 1/4 inch thickness. Spread with peanut butter, covering the entire dough. My grandmother made this candy when I was a little girl. She called it the "poor man's" candy. No matter; we all loved it. She just used a tablespoon of potato to a box of confectioners. I couldn't believe how it would "gobble" up the sugar. I am a great-grandmother now and this is the first I have seen the recipe published. Really creates a wonderful nostalgic moment. Thank you!

This recipe turned out to be a great hit with my family. I really enjoyed it myself. I ended up having to use a little more than a pound of powdered sugar, so make sure you have enough just in case you need it.
