Field Ripened Tomatoes with Green Beans and 100-Year Ingredients

2 Red tomatoes White pepper to taste
2 Yellow tomatoes 1 tb Fresh basil, julienned
1 tb Diced shallots 1 c Blanched green beans
1 ts Extra virgin olive oil 1 c Mesclun greens
Coarse fleur de sel salt to 1 ts 100 year old Balsamic

Instructions for Field Ripened Tomatoes with Green Beans and 100-Year

Slice the tomatoes 1/2-inch thick and place in a shallow dish. Add the diced shallots, olive oil, salt and pepper. Add julienne of basil. Marinate for two hours. Serve chilled with green beans and mesclun greens to garnish. Drizzle on a few drops of the Balsamic and serve.
