Preparation

Peel and devein shrimp and discard shells. Heat oil over high heat in a 12inch to 14inch saute pan. Add garlic and cook until, light golden brown. Add shrimp and, tossing quickly, saute until just cooked through, about 1 to 2 minutes. Add parsley, toss to coat, season aggressively with salt and pepper and serve immediately. This delightful Spanish tapa recipe was very quick and easy to prepare. The shrimp were simply delicious! We left the end portion of shell and tail intact on the shrimp to help infuse more flavor. We also opted to add some fresh squeezed lemon juice to the hot pan along with the parsley to give more flavor to both the shrimp and the oil. Be sure to have some crusty bread on hand for mopping up the delicious pan juices.
