Garlicky Baked Shrimp Ingredients
Vegetable cooking spray
1/4 ts
Salt
1 1/4 lb Medium
shrimp
, peeled and
3 Cloves
garlic
, minced
1/2 c Dry breadcrumbs
2 tb Fresh
lemon
juice
3 tb Finely chopped fresh
parsley
4 ts
Olive oil
1 ts Grated
lemon
rind
Instructions for Garlicky Baked Shrimp
Coat 4 individual gratin dishes with cooking spray. Divide shrimp evenly among dishes; set aside. Combine the breadcrumbs, parsley, lemon rind, salt, and garlic in a bowl; stir in lemon juice and oil. Sprinkle the breadcrumb mixture evenly over shrimp. Place dishes on a baking sheet. Bake at 400 degrees for 13 minutes or until shrimp are done and breadcrumbs are lightly browned. Yield: 4 servings.
