German Potato Salad #4 Ingredients

12 md Potatoes 1 ts Celery seed
12 sl Bacon 1 ts Ground mustard
1 1/2 c Chopped onion 1 pn Pepper
1/4 c All-purpose flour 1 1/2 c Water
1/4 c Granulated sugar 3/4 c Vinegar
1 tb Salt Chopped fresh parsley

Instructions for German Potato Salad #4

submitted by: child@oasis.novia.net (Lil, Omaha, Nebraska (GO HUSKERS!)) My dear grandmother gave me this recipe, and we would always find it on her table for most Sunday suppers. In a saucepan, cook potatoes until just tender; drain. Peel and slice into large bowl; set aside. In a skillet, cook bacon until crisp. Remove bacon to paper towels; discard all but 1/3 cup drippings. Saute onion in drippings until tender. Stir in the next six ingredients. Gradually stir in water and vinegar; bring to a boil, stirring constantly. Cook and stir 2 minutes more. Pour over potatoes. Crumble bacon and gently stir into potatoes. Sprinkle with parsley. There were a lot of German Potato Salad choices. I chose this one because of the story. My wife has german heritage and grew up eating German Potato salad. She was the taste tester on this one. Salad is yellow because I used Yukon Gold potatoes.
