50% would make "Greek Salad Dressing" again.

In comparison to other Greek salad dressings I've made, this one didn't have as much "zip." I would either increase the lemon juice, or add some red wine vinegar. However, I did like the addition of the dijon mustard and garlic. I also like my Greek salads with fresh oregano, and did add this to the recipe.

Haven't tried making fresh Greek Salad dressing before, but this worked well. Great for a light meal in early summer. Consider pairing with Greek Salad #3, which is also available here on BigOven.com.
