Hash Browns Ingredients

1/4 c Butter or margarine 1 md Red or green bell pepper,
1 lb Idaho Potatoes, peeled, 1/2 ts Salt
1 lg Onion, diced 1/8 ts Freshly ground black

Instructions for Hash Browns

In a 1 2-inch skillet over medium-high heat, melt the butter. Add Idaho Potatoes, onion, and bell pepper and cook about 8 to 10 minutes, gently stirring the mixture every few minutes. Add the salt and pepper: cook until the potatoes are well browned on both sides and tender. (Makes 4 servings) From the files of Al Rice, North Pole Alaska.
