Hawaiian Turkey Salad Ingredients
3 c Cooked
brown rice
1 md
Apple
; unpeeled
2 c Cooked
turkey
core
d and chopped
(coarsely chopped)
1/3 c Chopped macadamia nuts
8 oz
Pineapple
chunks in juice
1/2 ts
Salt
drain
; reserve juice
1/2 c Plain
yogurt
8 oz Sliced
water chestnut
s
Lettuce
leaves
drain
ed
1/4 c Shredded
coconut
; toasted
Instructions for Hawaiian Turkey Salad
Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt. Toss lightly with yogurt and 1 tablespoon pineapple juice. Serve on lettuce leaves and garnish with coconut.
