Herbed Crab Sandwiches Ingredients

1 lb Lump crabmeat 1/4 lb Low fat cream cheese
2 tb Low fat mayonnaise; plus 2 2 Eggs; beaten
2 ts Fresh parsley; minced 3/4 ts Dijon mustard
2 ts Fresh tarragon; minced 4 English muffins; split and
1 tb Scallions; plus 1 tsp., 4 sl Tomato

Instructions for Herbed Crab Sandwiches

Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl. In a separate bowl, beat together the cream cheese, eggs, and mustard. Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes. Add the tomato slices and broil again for 2 more minutes. Per serving: calories 386, fat 13.1g, 31% calories from fat, cholesterol 233mg, protein 34.4g, carbohydrates 29.8g, fiber 2.0g, sodium 927mg.
