Herbed Egg Salad Sandwiches Ingredients

4 Hard-boiled large eggs;	2 ts Fresh lemon juice; or to
2 tb Mayonnaise	1 ts Dijon mustard
2 tb Sour cream	A pinch freshly grated lemon
2 tb Minced fresh herbs such as	8 sl Whole-grain bread
1 Scallion; minced

Instructions for Herbed Egg Salad Sandwiches
