Hillbilly Jambalaya Ingredients

12 pounds Rice 1/2 cup Salt
24 pounds Chicken; cut up 2 tablespoons Garlic powder
12 pounds Sausage; sliced 2 tablespoons Accent? seasoning
10 pounds Onions; chopped 2 tablespoons Cayenne pepper
1 head celery; chopped 2 tablespoons Black pepper
2 bunches Green onions; chopped 1/2 cup Worcestershire sauce
1/2 cup Kitchen bouquet?

Instructions for Hillbilly Jambalaya

1. In a 15-20 gallon pot, brown sausage; add a little oil. 2. Add onions and celery, stir and cook until tender. 3. Put in water for 12 pounds of rice. Bring water to a boil while adding Worcestershire sauce, Kitchen Bouquet?, Accent? seasoning, cayenne pepper, black pepper, garlic powder and salt. 4. When water is boiling, add chicken and cook 15-20 minutes. 5. Put in rice, cover, turn down heat. Put in green onions, lift rice off bottom. Takes 30-45 minutes for rice. This is great it needs regular stirring to prevent the rice from sticking. I scaled it down to suit 4. I only wish I had authentic, dented tin plates to serve it on.
