Holiday Rum Balls #1 Ingredients

1 c Confectioners sugar 2 ts Vanilla
2 tb Cocoa 3 tb Light corn syrup
2 1/2 c Crushed vanilla wafers 3 tb Rum
1 c Finely chopped pecans 1/4 ts Almond extract

Instructions for Holiday Rum Balls #1

1. Sift cocoa and confectioners sugar together and combine with cookie crumbs and pecans. 2. Add corn syrup, rum and flavorings. Roll into 1" balls, and then roll in granulated sugar. 3. Great picture. Increasing the rum is usually a good idea. Be sure to pre-sample it to verify it's quality. =;)

I think I forgot to give these a rating - definitely great! A lot of traditional rum ball recipes use powdered sugar on the outside, and you could always do that with these, but the granulated sugar was good too.

These are quick to make (no bake) and absolutely delcious. I had a friend over when I was making these and they seemed to be disappearing as quickly as I could roll new ones. Next time I might increase the ratio of rum to corn syrup, but they are fantastic as is. I plan to let them dry out for a couple of days before eating.
