We used a similar version from "Living High on The Hog". We used about a pound of baby carrots sliced into 1/4" slices. We covered them in water and simmered about 12 minutes until they were tender. Then we added 2 TB honey, 2 TB Brown sugar, 2 TB Butter and a pinch of dried tarragon (no salt). It was delicious and our kids loved it.
