Pumpkin Tomato Bisque Ingredients

Pam or similar nonstick 4 c Fresh or canned pumpkin or
1 tb Mild vegetable oil 1 cn Whole tomatoes with their
1 tb Butter 1 tb Maple syrup
1 lg Onion, chopped Salt and fresh ground black
4 c Vegetable or chicken stock, Minced parsley for garnish

Instructions for Pumpkin Tomato Bisque

In large soup pot, heat oil and butter together over medium heat. Add onion, and saute until softened, about five minutes. Add stock. Heat through. Add pumpkin, whisking in. Heat again. Add tomatoes, maple syrup, and heat through. Season to taste with salt and pepper. Serve hot, with a parsley garnish.
