Pumpkin Whoopee Pies Ingredients

3 c Flour 4 Eggs
1 ts Baking soda 3 tb Molasses
2 ts Baking powder 1 1/4 c Pumpkin
1 ts Salt 1/2 c Buttermilk
1 c Butter FILLING
1 1/4 c Brown sugar 1 c Butter
1 c Sugar 10 tb Marshmallow cream; heaping
3 tb Pumpkin pie spice 1 c Powdered sugar
2 ts Vanilla 1 ts Vanilla

Instructions for Pumpkin Whoopee Pies

Preheat oven to 350? Combine cookie ingredients and drop by spoonfuls on cookie sheets. Bake for 10 minutes and cool completely. Beat filling ingredients together and sandwich between 2 cooled cookies. Wrap with plastic wrap. NOTES : I use crisco icing for filling.
