Baking time saving tips.

To soften cream cheese quickly, unwrap it and place in a microwave safe bowl. Microwave at 50% power for 1 minute. Let stand 1 minute before using.

To soften butter quickly, just grate it on the large holes of your grater, and it will soften almost immediately!

Spray the insides of measuring spoons or cups with cooking spray before measuring sticky ingredients like honey, corn syrup or molasses. The ingredient will slip right out.

When making cookies, double the batch, then divide it in two. Roll half into logs and wrap tightly in plastic wrap. Store the rolls in the refrigerator to slice and bake later for fresh cookies anytime!

When makeing pies, double the pastry recipe, divide into portions, then form each into a flattened disk, like a pancake. Wrap and freeze the extra recipes. Next time you need a pie, thaw on the counter about 10 minutes, and you are ready to roll into a pastry crust!

almond essence

Hi - New to this site.  Does anyone know where I might purchase almond essence?  I've been searching for several hours and cannot locate any.  If I continue to have no luck, is it safe to substitute pure extract for it in a delicious, gluten free, almond tart recipe?

Self Rising Flour -vs- All Purpose Flour

You dont need to purchase self-rising flour when you only need a cup or two. To turn all-purpose flour into one cup of self-rising flour, add 1 1/2 teaspoon baking powder and 1/2 teaspoon salt to one cup of all-purpose flour and sift together.

One of life's little mysteries: how do you solve this one?

I have several recipes that call for a topping (e.g. caramel crunch candy) to be placed on the side & top of the iced cake.  How do you get the topping to adhere to the sides of the cake?  So far, I have been just throwing bits of crunch at the iced cake and that works, sort of...but that'sliterallya hit & miss method!  Ideas?

Alternative to Crisco

Hi everybody, I've just discovered this site and I'm loving it!
 
A few cookie recipes call for Crisco(butter flavour)? but here in Ireland we don't have it, any sugestions for a replacement? I thought it would have been butter but some recipes call for both. Thanks in advance!

What is Icing sugar? What is drinking Chocolate?

I was looking for cannoli recipes and found one here called sweet ricotta cannoli.  By icing sugar do they mean powdered sugar?  By drinking chocolate do they mean the dry like Nestle Quick?  Anyone make these?

Q re: yeast dough

I have a recipe for pumpkin dinner rolls and also have plans to entertain 3 different times in the next 2 weeks.  I would like to make 1 recipe and then bake the rolls as needed.  Is that possible?  How would I store the remaining dough?

baking soda

Hi,
I have a recipe which calls for baking soda as well as baking powder. Now, I live in a country where there is no baking soda available, and even if they have it, I have a language barrier to ask for it. Could someone suggest substitutes or the method of how I go around it? Thanks

Crystalline fructose?

This might be a stupid question but what exactly is crystalline fructose?  Is there a suitable substitute for it?
