Holiday Dinners for the Immediate Family

In the past, I've been drawn to holiday cookies, desserts and of course recipes for the Christmas Dinner for the crowd of people who come over.  This year, however, Iwant to focus on recipes with 4-6 servings for the weeknight family meals so we can celebrate during the entire season.  I'm looking for entrees, sides and desserts that can be prepared and cooked within an hour or two that definitely take the "hum-bug" out of routine suppers.  Thanks!  ~lauriepooh

just wanted to say hi and check out some recipes .it's geting to look alot like christmas everywere you go.

My must-have Christmas Coconut Cake

This is my all time favorite Coconut Cake(my Toasted Coconut Cake is a close 2nd)


 Coconut Cake
 
 1 box white cake mix
 1/4 c. vegetable oil
 3 eggs
 8 oz. sour cream
**1 can cream of coconut (8 1/2 oz.)
Mix all ingredients with electric mixer 2 mins.Bake in greased 9x13"pan
 or 3 9 "round pans at 350 degrees for 30 minutes. Cool then frost.
 Frosting:
 8 oz. cream cheese
 1 lb powdered sugar
 2 tbsp. milk
 1 tsp. vanilla
 7 oz coconut
 Blend powdered sugar into softened cream cheese.
 Add milk and vanilla. Spread between cake layers,sides and top.
Sprinkle coconut over the top. Do not need to refrigerate.

 **cream of coconut is usually found in the liquor department.

Merry Christmas Everyone

Before wrapping the rest of the Christmas presents, I wanted to stop a moment to say Merry Christmas to all of you -- may you have a beautiful holiday and a very wonderful and healthy new year. 
 
We have relatives in from out of town, and on the menu for us this holiday will be:  Grilled Salmon with Pesto (something Red-ish and Green) with Rice Pilaf on Christmas Eve, then on Christmas Day I'll be serving a Beef Tenderloin with Mushroom Duxelle Filling and Port Shallot Sauce, with scalloped potatoes and broccoli.  Finishing off with a lemon sorbet and blueberry simple dessert.  I'm also doing the make-ahead sausage egg bake, which will be easy to pop in the oven on Christmas day.

Hi,
Excuse me for my ignorance but, what makes ham, "HAM", rather than just a leg of pork. When I buy a leg and roast it, it never comes out 'hammy' or pink, it's greyish colour!

Our menu

Dinner on Christmas Eve is ever changing, but always served buffet style. Two years ago we had a swedish buffet. Last year a mexican buffet. This year it will be all about seafood.
 
Dinner on Christmas day is a little more formal with a spiral cut ham as the main entree.

Breakfast Casserole

I always make a breakfast casserole the night before and then pop it into the oven christmas morning just as the last packages are being unwrapped. This year Im making "French Toast Casserole"(BO recipe). I had a chance to try it out on family visiting from Washington. There wasn't a bite left. It is melt in your mouth good.

Christmas Menus

Everyone who celebrates Christmas seems to have different traditions and timing around meals.  In our household, we usually have a simple but elegant dinner (optimized for easy, quick cleanup!) on Christmas Eve with visiting relatives, then try to keep it as simple as possible throughout most of Christmas morning.  Skipping lunch, by Christmas evening, we're often ready to enjoy some shrimp cocktail and drinks around the fire with friends and family, and an easy dinner.  What's your menu tradition?
