Say goodbye to Aunt Jemima, once you taste these homemade pancakes I think you'll agree they're much better than the boxed kind! Add a bit of vanilla or fruit (frozen blueberries work well) to make them extra special. If you want, mix up the dry ingredients in advance and give it away as a gift (with instructions on how to finish making the pancakes) or just store it for even quicker pancakes on Sunday mornings.

You can of course just buy puff pastry at the store, but when you are feeling on top of the kichen (or you want to make edits for low carbs & diabetic friendly dishes) I thought I would share this. To be honest, I think I am going to stop buying pastries, pie crusts, bread, etc - my old gas stove just makes it too much fun and saves enough money to buy other important things - like salmon!

I adapted this recipe for a diabetic friend. I substituted 1 cup of Splenda (for Baking) for the sugar and substituted unsweetened applesauce for the honey. You can use blueberries, prunes, fig, or raisins as well as dates.
