I had a similar dish recently at a German restaurant in Dresden. This is my version of that dish. It's creamy with a great light lemon flavor and is excellent topped with grilled salmon.
The German apple pancake is actually a cross between a pancake and a popover. This recipe produces a pancake that has crisp light edges, a custard-like center, and buttery sauteed apples baked into the batter.
This was an easy pie to make and nice to freeze. Nice choice for something different and we enjoyed it with vanilla ice cream. Texture similar to pecan pie.
