This is a fantastic Mexican type one dish meal with the beef, refried beans, tortillas, and vegetables. You can make it to the degree of spicy you desire by the type of tomatos you use. So, go ahead....experiment. AND, OLE!!

About ten years ago, my wife and I enjoyed a terrific bowl of tortilla soup at a cafe perched above the bustling streets of Cabo San Lucas, Mexico. I've been trying to reproduce it ever since; this is fairly close. The secret is in the lime juice and the freshly made tortilla crisps.

I got this recipe from one of The State Fair of Texas cookbooks. It's old and I couldn't find the year, but I started collecting these cookbooks when I got married (30 years ago). This is very good cornbread and it goes good with a big pot of pinto beans. The person that submitted the recipe is Debbie Hamilton from Garland, Texas. Hats off to her!
