Subject: My must-have Christmas Coconut Cake

This is my all time favorite Coconut Cake(my Toasted Coconut Cake is a close 2nd)


 Coconut Cake
 
 1 box white cake mix
 1/4 c. vegetable oil
 3 eggs
 8 oz. sour cream
**1 can cream of coconut (8 1/2 oz.)
Mix all ingredients with electric mixer 2 mins.Bake in greased 9x13"pan
 or 3 9 "round pans at 350 degrees for 30 minutes. Cool then frost.
 Frosting:
 8 oz. cream cheese
 1 lb powdered sugar
 2 tbsp. milk
 1 tsp. vanilla
 7 oz coconut
 Blend powdered sugar into softened cream cheese.
 Add milk and vanilla. Spread between cake layers,sides and top.
Sprinkle coconut over the top. Do not need to refrigerate.

 **cream of coconut is usually found in the liquor department.
