Over in a town called Bandon, Oregon they have Bandon Cheese, I think you can check them out on the web, but I always get mine from them, it's fantastic!!!
I have organic
I actually have a home based business call From Oregon. I grow and sell organic spices, jellies, jams and butters. Since I just started this year I have not gotten my jars for all of my sauces, but I do have great suggestions on cooking different things organic.
University District (Seattle) Farmers Market
Just discovered the very nice Farmers Market that happens on the weekend in the U-District in Seattle. Great place for local beets, cheese, salmon, and more.
Organics in a box?
Is anyone a current subscriber to an organics-in-a-box type delivery service? Am evaluating these and would love any thoughts.

OK, I'm familiar with Beecher's at Pike Place -- which makes a terrific Flagship cheese. What are some of your favorite Pacific Northwest, local cheeses?
