In Norway, Kransekake is almost considered the National Cake. Traditionally used for both weddings, christenings, Christmas, and the 17th of May (Norwegian Constitution Day), it's deliciously almondy and jaw-ache inducingly chewy.
Like all classic dishes every family has a slightly different version of kjttkaker, and everyone's mother always makes the best. This recipe comes from my grandfather, and is one of my all time favourite dishes.
